I probably cook lamb 3 or 4 nights a week and I have to admit this is the first time I have grilled chops and they were outstanding. The marinade is
- 2 cups red wine
- 1 tp kosher salt
- 1 tp white pepper
- 1-2 tbs of crushed garlic
- 1-2 tablespoons of olive oil
Dump all ingredients in a zip lock bag with your chops either rib or loin and let sit for one hour or up to overnight. Preheat grill on med high – high heat and grill chops 5 min on each side for med rare.
Cucumber Yogurt Sauce
1 cup plain Greek yogurt
1/2 Cucumber chopped
Dash of garlic powder
Squeeze or two of fresh lemon
